Raspberry and Almond ‘dreamboat’ cupcakes

This sweet almond sponge is balanced by the twang of the fruity raspberry jam, marbled throughout the cupcakes. Topped with a creamy raspberry buttercream, these are perfect with a cup of tea or, well, for any occasion really!

To make these cupcakes extra dreamy, top them with everyone’s favourite movie star…I recently took these to a dinner party with my girlfriends and judging by the squeals which filled the room, it was as if Ryan Gosling was there himself. We wish.

Ingredients:

  • 50g fresh raspberries
  • 50g seedless raspberry jam
  • 125g baking butter, at room temp
  • 100g caster sugar
  • 2 medium eggs
  • 150g self raising flour, sifted
  • 1 tbsp of milk

For the butter cream and decoration:

  • 125g baking butter, at room temp
  • 220g icing sugar, sifted
  • 10 individual raspberries
  • Ryan Gosling cake toppers from the Cakeshop at Amazon.co.uk

Method:

  1. Preheat the oven to 180 degrees C and fill a 12-hole muffin tray with cupcake/muffin cases
  2. In a bowl, gently crush the raspberries and mix with the raspberry jam until the mixture is smooth and then leave to one side
  3. In a mixing bowl, beat the butter and caster sugar until pale and creamy and then gradually add the eggs and milk until combined
  4. Gently fold in the sifted flour until all the ingredients are just combined, then slowly fold in your raspberry jam mixture to create a marble effect
  5. Spoon the mixture into your cake cases and place in the oven for 20 minutes or until they are slightly brown and risen
  6. Leave the muffins to cool on a wire rack and begin to make the buttercream. Place the butter into a clean mixing bowl, and mix until soft and smooth. Add your sifted icing sugar and cream together slowly
  7. Take the leftover raspberries and begin to rub through a fine-meshed sieve so the puree falls on top of your buttercream mixture. Once you’re certain all the juice has been removed from the raspberries, mix the puree into the buttercream mixture until you’re left with a pink, creamy icing
  8. Place the icing into a piping bag and ice your cakes. For decoration, place any leftover raspberries or your Ryan Gosling toppers on top of the cake and swoon
