Coconut and raspberry pancakes

Everyday should be pancake appreciation day but who am I to turn down a whole day dedicated to the greatest breakfast of all.

A winning combination by all accounts, this year’s Pancake Day deserved something extra special so this morning I whipped up this delicious coconut and raspberry pancake recipe to trump all the other pancake recipes on my blog. I was sure I wasn’t going to top peanut butter and banana or strawberry and Nutella but here I am swooning over these little hot cakes.


The below is my fool proof, basic pancake recipe so if you don’t wish to include the desiccated coconut this will not affect your mixture.

TIPS: If you really are loco about coco, then you can use The Groovy Food Company’s Organic Coconut Flour or Sugar instead of those listed below. You are looking for a thick(ish) batter to create the infamous fluffy American style pancake

Ingredients (serves two, makes 8 pancakes):

  • 135g Homepride self raising flour
  • 1 tsp baking powder
  • 2 tbsp golden caster sugar
  • 130ml milk (any kind)
  • 1 large egg
  • 2 tbsp melted butter or olive oil
  • 125g raspberries
  • 30g desiccated coconut

To serve:

  • Coconut Greek yoghurt
  • Maple syrup (optional)
  • Choice of fresh fruit

Method:

  1. Sift the flour, baking powder, desiccated coconut and caster sugar into a large bowl. In a jug, whisk together the milk and egg and then add the melted butter

  2. Pour the milk mixture into the flour mixture along with a handful of raspberries (saving some for he topping) and whisk until you have a smoothish batter

  3. Heat a non-stick frying pan over a medium heat with a knob of butter or oil if you’re using then add a ladle of the pancake mixture to the pan – you can cook more than one at a time if your pan is big enough

  4. Wait until the top of the pancake begins to bubble, then flip it over and cook until both sides are golden brown and the pancake has risen

  5. Repeat until all the batter is used up and serve with a big dollop of coconut Greek yoghurt, raspberries and some maple syrup if needed
