Cookies and Cream Rocky Road 

This simple recipe makes a classic treat taste so much better (I know, I didn’t think it was possible too!) A real party pleaser, these white chocolate and Oreo rocky road bites are a great way to use up leftovers in your cupboard plus they look and taste absolutely delicious.

Ingredients (makes 12 Rocky Road pieces using a 20cm square tin): 

  • 400g white chocolate
  • 75g cranberries
  • 150g of crushed Oreos
  • 125g mini marshmallows
  • 3 finely crushed Oreos for decoration


  1. Line a square brownie tin with butter and cling film and set aside. Place half of the Oreos (50g) into a sandwich bag and crush with a rolling pin until you have fine crumbs. Break the remaining half into smaller chunks and place all of the biscuit crumbs into a mixing bowl along with the marshmallows and cranberries
  2. Begin to melt the white chocolate in a microwave, checking every few seconds as it won’t take long to burn
  3. Once smooth and melted through, pour three quarters of the white chocolate into the mixing bowl (you’ll want to leave some for the end) and stir into all the ingredients until completely covered
  4. Pour into your lined square brownie tin, pressing down on the mixture with the back of a metal spoon. Pour the remaining chocolate on top so it fills the gaps and then finely crush 3 Oreos in a bowl and sprinkle the crumbs on top
  5. Leave in the fridge until they’ve set and serve
