White Chocolate Confetti Bars

So we could probably all do with some cheering up as it’s January, especially as today is officially Blue Monday! To bring a bit of fun to the week, I’ve made these little wonders: white chocolate, marshmallows, cranberries, sultanas and corn flakes…sounds strange but don’t knock it til you try it! It’s the perfect way to get rid of cupboard goodies and turn them into something special.

Makes about 20-25


  • 400g white chocolate
  • 50g dried cranberries
  • 100g sultanas
  • 100g marshmallows
  • 3 large handfuls of corn flakes
    (this is a rough guide so feel free to change it up how you like)


    1. Line a square tin
    2. Melt the chocolate in a heatproof bowl over a pan of water.
    3. Once cooled slightly, mix in all the other ingredients. The marshmallows will start to melt slightly which makes a really nice texture once they’ve cooled – plus it looks more fun!
    4. Pour the mixture into the tin. I added sprinkles to the top for extra wow factor, then move to the fridge to cool. Once it has set, just cut into slices and voila!
